The fresh salmon, originating from Scotland, is lightly smoked and succulent, and there is no brown meat whatsoever. There are two cuts available: long, ribbon-like slices, and a perfect, boneless, center-cut filet. Our Fromage Friday special includes the sliced version, but both are available with advance order. As of now, we sold out the center-cut filets, but we will have more next week.
To enjoy this pairing, wrap a piece of the ribbon sliced smoked salmon around a small chunk of Fleur Verte, a fresh goat cheese pressed with herbs and pink peppercorn. Take a sip of wine, repeat.
