Spicy Mushroom Lasagna with Grilled Vegetable Salad

This lasagne is made with a combination of fresh and dried wild mushrooms. The complex, earthy, and deeply umami flavor of dried porcini and chanterelle mushrooms give the dish exciting flavor. The dish has dried red chilis, but it’s not overly spicy at all. There’s very little cheese in this lasagne, just a touch of our best Parmigiano-Reggiano. The Spicy Mushroom Lasagna is served with a colorful salad of grilled vegetables. Pinot Noir is a natural pairing with anything containing mushrooms. Since this dinner doesn’t have a sweet sauce or any fruit elements, we paired two French Burgundy wines with the meal. The Collet is a lean and relatively light bodied Pinot Noir, which opens up considerably once opened. The Drouhin Chambolle-Musigny is a more complex Pinot Noir with darker fruit and notes of truffle. It’s a real treat!
