Traditional Cassoulet with Fuyu Persimmon Green Salad and Crispy Baguette

Cassoulet is perfect for a chilly Fall / Winter day. The base is a flavorful, slow-cooked, white bean and meat casserole. Crispy duck leg confit, Toulouse sausage and garlic sausage are the traditional meats included in this classic dish, originating in southern France. My version is pretty traditional… I’ve been making it for decades with little to no changes to my recipe. We’re serving the cassoulet with a refreshing green salad with Fuyu persimmon.
