Description
Chällerhocker, pronounced “holler hocker”, meaning “sitting in the cellar” is a Swiss cheese washed in brine and spices and then aged for a minimum of 12 months. Made from thermalized milk, the cheese is dense and smooth with very few holes or cracks. The flavor is a lovely concoction of roasted peanuts, melted leeks, brown butter, sweet cream and caramel. Firm yet creamy, this is a wonderful melter and is great for an extra exciting grilled cheese or as a way to liven up your fondue. This delicious cheese is a fabulous addition to any cheese board.

This is one of the best wine pairings we’ve ever had with cheese. The Chällerhocker is incredibly delicious and is fantastic with the Luna Chardonnay. The 2018 Winemaker’s Reserve is a blend of Chardonnay from Luna’s Estate Wente & Dijon Estate clones and cool climate Carneros Chardonnay. This 2018 Chardonnay is primarily barrel fermented and aged sur lies to give a refreshing, yet rounded finish.
