Firm and lightly smoked, sheep’s milk, Spain
Idiazábal – Made from unpasteurized (raw) sheep’s milk, this firm, traditional cheese hails from Spain. With a slight smoky aroma and flavor and deep richness from the high fat sheep’s milk, it is the perfect foil for Quince paste or Membrillo. The sweet and savory combination is the perfect pairing and we love it with the creaminess of Irish Whisky.
All of our cheeses are cut to order and the cost is based on the actual weight. Advance order is preferred. Just let us know what you would like to order and approximately how much of each cheese (ie: 1/4 pound, 1/3 pound, 1/2 pound, etc…), and we’ll arrange a convenient time for you to pick up your completed order.
