TASTING NOTES:
Perfumed aromas of cedar and ripe dark fruit are followed by a soft and full impression on the palate, with flavors of dark fruit and black pepper spice. The finish is long with luscious blueberry notes.
PRODUCTION NOTES:
Varietals: 95% Cabernet Sauvignon, 5% Petite Sirah
WINEMAKER NOTES:
7-day cold-soak followed by a quick, warm fermentation. The wine was left on the skins for one week after fermentation finished. Malolactic fermentation was done in barrels; the wine was racked once post-malo and once pre-bottling.
FOOD PAIRING NOTES:
Pairs exceptionally well with richly flavored meats, such as ribeye steak, prime-rib and lamb.
