Water buffalo milk cheese from Lombardy region of Italy
We finally were able to get Quadrello di Bufala, one of my favorite cheeses, which has been hard to find recently. The cheese is very nicely ripe and ready to enjoy with a delicious and powerful Southern Rhone red from Gigondas, comprised of 75% Grenache and 25% Syrah. Gigondas is located just east of Chateauneuf-du-Pape. 2015 was an exceptional year for the Gigondas region and is considered one of the area’s best vintages with an overall score of 97 points.
Quadrello di Bufala is made from pasteurized water buffalo’s milk in the Lombardy region of Italy, this washed-rind cheese is aged about 40 days. It has a bold & sharp, full flavored with complex grassy tones, semi soft smooth flavor, and an earthy, mushroom-like aroma. Wonderful for snacking, it also melts beautifully.

Recommended Wine Pairing:
This offers ripe and brambly red plum and darker berry aromas with earth, pepper and spice too. The palate has quite a punchy feel with meaty tannins, carrying darker plum and berry flavors. Drink or hold. — JS
