This award-winning, seasonal, raw milk cheese from the innovators at The Cellars at Jasper Hill Farm in Vermont is only made during the winter months. Similar in style to the classic Vacherin Mont d’Or from Switzerland, young cheeses are wrapped in spruce bark cambium imparting a rich, woodsy flavor and aroma. When fully ripe, wheels are spoonably soft with tastes of bacon, sweet cream and spruce. Serve this stunner whole by cutting off the top and dipping into the dreamy, creamy paste.
